These adorable mini nacho bites are perfect snacks for Friday night movies, house parties, and lunch picnics. We love fantastic little tidbits that spice up your palate. We started with avocado spread on salted almond crackers. We cooked ground beef with diced eggplant to pump up the nutrients without changing the flavor. Season with taco seasoning and top the avocado crackers. Finish the nacho bites with Garden Pico de Gallo.
Garden Pico de Gallo
1 bunch of cilantro, finely chopped
1 jalapeño seeded, rinsed, & finely chopped
3 Roma tomatoes, chopped
1 onion, finely chopped
Juice of 1-2 limes
Salt & Pepper to taste
Garlic, minced fresh, granules, or powder to taste
Finely chop the ingredients, stir, and enjoy!
