Decadent Lobster Eggs Benedict

Lobster Claw Eggs Benedict is a luscious start to your day. Start with your favorite buttered toast, English muffin, or sliced, roasted sweet potato. Then layer your flavors with a poached or fried egg, mashed avocado, diced tomatoes, warmed lobster claw meat, and finished with a simple hollandaise sauce. You can add Tabasco, roasted garlic, or chives or other fresh herbs to amp up your flavors. Sweet, savory, just Yum!


Hollandaise sauce: 1 serving



1 egg yolk

1 tablespoon hot water

1 pinch sea salt

1 teaspoon lemon juice (fresh is best)

1 tablespoon butter

cayenne pepper to taste




Combine all ingredients in a double boiler (or use a metal bowl over a pot of simmering water). Whisk, whisk, whisk until thickened. It should be thick enough to bead on your finger but not so thick that it won't pour. Remove from heat and serve immediately.
