Roasted Sweet Potato Avocado "Toast".
Sweet Potato(es), sliced lengthwise, 1/4-1/2"
Favorite Seasonings: Salt, pepper, cayenne, cumin, garlic salt, etc.
Egg: Chicken, Quail, Duck, etc
Hot Sauce: Sriracha, Tabasco, Ghost Pepper, whatever suits you
First, preheat your oven to 425. Coat the sweet potato slices with the olive oil, then season with your preferred seasoning. Place on a parchment paper lined pan and roast for 30 minutes, until tender. While the sweet potatoes are roasting, pan fry your eggs and bacon.
Layer smashed avocado, egg, and bacon on the sweet potato slices. Top with hot sauce. Enjoy!
